Huge plate of YUM for lunch today
sweet potato fries, tofu scramble, brocollini and hummus! For the tofu scramble I had a block of soft-ish tofu so I mashed it up and added it in a pan with coconut aminos and nutritional yeast, Cooked that for a couple minutes then added in a heap of mushrooms and spinach and cooked all together! Served up half for lunch today and placed half In a container to go towards tomorrow’s lunch
I’ve had a busy weekend of some social and uni stuff but have spent most of today laying on my bed attempting to get uni stuff done but am still feeling sick so haven’t been super productive. I also made some banana bread but undercooked it
still tasted delicious so am still going to eat it! I’ll make it again soon properly and post a recipe! Hope you’ve all had a great weekend!!
